Hello once more!

World is always going through changes, so do people. So, have some popcorns and watch while eWorld is changing.

It was a though week for me I must say. Changing faulthy PC motherboard, then to realise that my 2 TB disk has 77% of bad sectors after second scan, then firm from which I bought it says it has dropped on floor by me and sends me a pic of a damaged area on the side which wasn't there the day before... You can imagine my rage and I am still in battle mode with that firm... 100€ is 100€ after all... Then funeral. My moms aunt died and while we were on funeral my dad almost collapsed because of high pressure... At least that ended up well. Who knows, maybe I win on lottery today... After Euro Jackpot went to Croatia, also our lottery was won by someone... Maybe I will be lucky 3... Who knows... But first, a good meals to get some energy...

As said in a shout or two, today we have two recipes again. First is from USA and second one is from Peru. So, let's get started...

First is from USA.

USA

Bacon Cheddar Hasselback Potatoes


Serves: 4

Ingredients:

4 large Russet potatoes, washed
4 tablespoons unsalted butter, thinly sliced
kosher salt
fresh ground black pepper
olive oil
8 ounces Monterey Jack and Colby cheese blend (or your favorite) ( 226 grams)
16 ounces of thick cut bacon, cooked and crumbled (453 grams)

Directions:

Preheat oven to 400 F (200 C)

Place a potato on a cutting board with wood skewers on each side (lengthwise). Slice potato about 3/4 of the way through. The skewers will keep you from cutting all the way through. Cut to about 1/8" (3 mm) thickness. Drizzle potatoes with olive oil and place a piece butter in every few slices. Sprinkle with salt and pepper and bake for about 1 hour.

The potatoes will have kind of opened up so you can stuff cheese and bacon into the slices. Pack 2 ounces of cheese and 1/4 of your bacon into each potato. Return to oven and cook for 5 minutes until cheese is melted.

Peru

Pepian de Choclo


Time: 1 hour
Servings: 4

Ingredients:

2 pounds (1 kg) of yellow sweet potato
2 pounds (1 kg) of sugar
1 cinnamon stick
orange juice
orange rind
sprinkles to put on top of the finished product

Directions:

Peel the sweet potatoes and then boil them in water.
Prepare a puree using a potato masher/grinder.
Once you have formed the puree put it in a pan and add the sugar, cinnamon, orange rind and orange juice. Continue to heat all the contents in the pan while stirring it regularly. Once you can see the bottom of the pan remove the pan from the heat and let it cool.
Using spoons place the finished product in the pan into a large cake placing them on a buttered dish.
Preheat your oven to 100 degrees celcius (212 F) and cook for 30 minutes.
Add some of the sprinkles on top of the finished product.
