ENG - RECIPE

pick the pieces you like

slice it gently,
salt it mildly, then between every slice add a pinch

smear all the skin with extra virgin pig fat,
cover with alu-foil which inside is also covered by fat.
-that is a pro tip, foil will not stick to the meat, and
it will shield it while baking

place meat on baking grill in baking pan,
add water beneath - VERY IMPORTANT

bake in preheated oven at 250-275' C
after 1h remove foil and turn upside down.
bake another 15-30 minutes then switch the sides again.
bake until the skin is right colour -do not worry if it still soft
for it will harden and become crispy-crunchy while cooling

eat it 🙂
