I Used To Be A Vine
Thedillpickl
Hi kids!
Life was lazy in the garden. Mother's leaves shading us from the hot sun, her vines supplying my sisters and brothers with sweet pickle nectar. Life was good. Then one day we were PICKED! Packed in bushel baskets we were off to market.
Did you know a cucumber is a fruit?
While many in my family had short but glorious careers on Chef's Salad in fine restaurants or as the star in magnificent Cucumber Salads, I was destined to be a pickle. I had the perfect shape and size. My goal in life is to garnish the astro-sandwich for the Canadian Space Agency.

Heresy!
I like pickled sweet & sour and spicy pickles. But never a fan of garlic ones. Love garlic but NOT garlic and pickles together!
I really hate pickled vegetables. My mom used to pickle a lot (cucumbers, tomatoes, cabbage, onions) but I don't like too salty food. Basically I am the polar opposite of the average Greek which makes his/her plate a snowy scenery from the amount of salt they use. Hence the large amount of people in Greece with high blood pressure.
Unfortunately, a hundred years ago or so, the principal way to preserve food was by salting. Some meats were smoked or sugar cured but salt lasted longer. With meats, and a few others, the majority of salt was removed when cooked. The meat was boiled and salty water poured off. Similarly you could remove a pickle from the brine in the jar and place it in a bowl of water the day before. That would reduce some of the salt.
I understand how you feel. I am diabetic which caused many problems, including Congestive Heart Failure. I find even a few "low sodium" processed foods that choke me with salt. I think it is culture everywhere.
