It is great weather where I live and a Friday so a shorter article today.

I grew up in Philadelphia. We are famous for a cheese steak sandwich. I have been making these since I was a kid and once was going to open a sandwich shop making them. The meat is an expensive cut for a working class food. If I was on death row and they said to me what do you want for your last meal it would probaly be this.

Moo Recipe

First Carmalize a half a large onion chopped into fine pieces. Next take ½ pound of very very (shaved) thinnly sliced prime rib eye steak(Austrialian is best). Fry it at high heat and a little butter with the onions for 2 minutes. When you place it in pan, let it cook for 20 secounds on one side, flip flip it and pull all the steak apart in to little pieces till most of the pink goes out of meat. Some people chop the steak instead of pulling but I prefer pulling. Place 3 or 4 slices of american or Eden soft cheese on top of steak, cover pan, and remove from heat. After two minutes, when cheese melts, mix the steak and cheese to coat all the steak with the cheese. Serve on a toasted long roll.

Some times acompined with catchup, pickled pepers, or pickles. Never with mayo, fried green pepers or mushrooms.
