It is great weather where I live and a Friday so a shorter article today.
I grew up in Philadelphia. We are famous for a cheese steak sandwich. I have been making these since I was a kid and once was going to open a sandwich shop making them. The meat is an expensive cut for a working class food. If I was on death row and they said to me what do you want for your last meal it would probaly be this.
Moo Recipe
First Carmalize a half a large onion chopped into fine pieces. Next take ½ pound of very very (shaved) thinnly sliced prime rib eye steak(Austrialian is best). Fry it at high heat and a little butter with the onions for 2 minutes. When you place it in pan, let it cook for 20 secounds on one side, flip flip it and pull all the steak apart in to little pieces till most of the pink goes out of meat. Some people chop the steak instead of pulling but I prefer pulling. Place 3 or 4 slices of american or Eden soft cheese on top of steak, cover pan, and remove from heat. After two minutes, when cheese melts, mix the steak and cheese to coat all the steak with the cheese. Serve on a toasted long roll.
Some times acompined with catchup, pickled pepers, or pickles. Never with mayo, fried green pepers or mushrooms.

thomas jefferson apple dumplings is one of my favorites i cant get the original article but this is how i make it
you need 1 roll of filo pastry or normal sour dough rolled. i dont know but here we get it in a roll
then granny smith apples not much

you roll out the pastry and place square or rectangular cut apples on the pastry and cut rectangular around it and fold it so that apple bit is tottally concealed. now you load the roaster. but you are working like a lasagne so first make the syrup. recipe calls for half a salted brick of kerrygold salted butter but you can reduce that
ok so you throw in one can of condensed milk +250 ml with the butter and then a cup of sugar so you put this in a pan if it has melted you throw in one or 2 cap of vanilla extract we have very small bottles 100 ml

you throw in one or 2 caps of almond extract as well our extract is very strong so a this would probably be half a teaspoon
bring it to the boil till it makes dark parts in there. basically the vanilla extract burns up just stir it in and take it off. now place your dumplings in the pyrex roaster and throw over the syrup. you can fill it up with dumplings to about half the roaster and throw suryp each time over all the dumplings. now take a can of appletizer https://media.takealot.com/covers_images/0ab75d65910040d1814097429cf07026/s-zoom.file and if you dont get appletizer try a bitter hard cider or cider (dont know what alcohol will do to it though) and pour it over the pastry and syrup anyway place this in the oven and roast it for about 1 hour . the cider will combine with the syrup.
so this is usa recipe with irish butter and south african soda in it.
i enjoyed this very much and others as well.
