Hozzávalók 6 személyre:
3 nagy kacsamell
3 dl csirkealaplé (leveskockából is lehet)
3 dl paradicsompüré
1 kis üveg áfonyadzsem
1 hagyma
2-3 babérlevél
3 dl vörösbor
1 nagy sárgarépa
só
Elkészítés:
A kacsamelleket kettévágom, a zsíros bőrt leszedem róla, egy keveset félreteszek. A megtisztított melleket megtűzdelem a hájdarabkákkal, hogy a hús omlós legyen. Szebben sül, ha a bőrt csak beirdalom és a húson hagyom, de úgy sokkal kalóriadúsabb. A megtűzdelt melleket tepsibe fektetem, megsózom, majd a paradicsompürét és a dzsem felét rákanalazom, a felkarikázott répát a babérleveleket és a megmosott, cikkekre vágott hagymát rádobom, majd a bort, végül a húslevest is ráöntöm. Alufóliával betakarom, és 190 fokon sütöm. Ha omlós puha, kiveszem a sütőböl, a húsdarabokat kiemelem, tálra teszem, majd a léből kihalászom a zöldségeket, a többit összeturmixolom - vagy csak leszűröm -, és kevés kimért lében liszttel sűrítem, még ízesítem. A dzsem másik felét beleteszem, és a friss áfonyával felfőzöm. A sűrű mártást a húsra öntöm, meg külön mártásos tálba is teszek belőle. Egyben főtt burgonyával tálalom.

Van, amikor egy kis bor kívánkozik bele, vagy só, tehát ízlelgetni kell.
