Mashed Potato-topped Mini Meatloaves - Serves 4 to 6
I made this one to use up left-over mashed potato, but as you'll see in the photos, I didn't have quite enough mashed potato to top all the mini meatloaves.
1 tablespoon olive oil
2 green onions, chopped up
Half a yellow, orange or red bell pepper, chopped up in small bits
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 cup beef broth
1/3 cup bread crumbs or cracker crumbs
1/4 cup grated Parmesan (if desired)
pinch of salt and pepper
1 pound ground beef
2 cups leftover mashed potato
For Mushroom Sauce:
1 tablespoon margarine
1 package of white mushrooms, sliced thin
1/2 teaspoon dried thyme
pinch or salt and pepper
1 tablespoon flour
1/2 cup of beef broth
1/2 cup milk (original recipe calls for cream)
In a pan over medium heat, heat olive oil and cook green onion, bell pepper, oregano and thyme until the pepper is softened.
In a bowl, combine egg, broth, bread crumbs, cheese, salt and ground black pepper. Then add beef and the pan veggies and mix until everything is distributed more or less evenly
Divide mix evenly between greased muffin tins, pressing mix down slightly to flatten - top with mashed potato.
Bake in center of 375F oven for about thirty minutes, or until the meat at the center of your largest muffin-mini-meatloaf is cooked.
For mushroom sauce - Return to your pan, melt margarine and cook your mushrooms, thyme salt and black pepper for about 10 minutes, or until most liquid has evaporated. Stir in flour and cook for 1 minute, then pour in broth and cream and allow to cook until sauce thickens slightly.
Hot Cocoa Mix - Yields about 5 1/2 cups of mix
2 cups powdered sugar
1 cup cocoa
2 1/2 cups powdered milk
1 teaspoon salt
2 teaspoons cornstarch
A pinch of chili powder or cayenne
1/2 cup chocolate chips or mini-marshmallows, or smashed peppermints, or anything that'll melt and goes with chocolate, really
Mix all ingredients in a bowl, well. Then store in sealed container of choice - for yourself or for gifting to neighbours/work colleagues/friends/whoever.
To use mix for hot cocoa, simply spoon out four or five tablespoonfuls into your hot chocolate mug, and then add boiling water - mix well, drink, and bounce off the walls for the next two or three hours. 6 cups of mix should give you at least 18 servings.
