Other nations (such as Indonesia) have been taking over any nation they can get there hands on while the US has been keeping with the borders we have had since Erepublik came online. By staying in that situation we may one day be conquered as well, once these other nations become more powerful.
By expanding into Mexico we gain natural resources which makes our market larger and goods cheaper.
new citizens who a majority will likely not start a resistance war and more than likely will just be neutral, not really caring if it is the US or a Mexican government ruling them( since we are a federal system they still rule over themselves as states, just there federal government was abolished and replaced with the US federal government)
We also gain new soldiers for future wars.
The only issues of concern is how will the rest of the world view us? And that is assuming it is really even a concern since we are pretty large in numbers. And finally the risk of putting outselves in harm of resistance wars, which is fine right now since we can crush them, but as we get larger it can be harder to fight.

Thats a great idea!!! Lets go to war and drop taxes!!!! Idiot. War and expansion is great, but drop taxes? Who the hell notices them anyways? Not many, and they do great things for our nation. We are not going to be a large player by overexpanding and not having the federal coffers to back it up.
We don't really gain in resources by taking over Mexico because they don't have any high production areas that we don't already have in the US. And the way the rest of the world views us does matter, the US may be the biggest but there are other nations out there with stronger militaries who could probably beat us in a war.
we may have a large population but how many of them are actually active? In the last presedential election we didn't even break 2000 voters. that is largely our militarily active population give or take a few. We aren't as impressive as we would like to think. Taking over places with populations of 20 or 30 inactive players are going to help us.
