各位好久不見了!! 看著我長草的食譜報,自己都有點桑心了,不過沒關係,我們今天來吃紅燒牛肉麵,而且我還任性的加了我喜歡的紅白蘿蔔! :3
It has really been quite a while since I posted any articles, but I'm back! We're gonna have some Taiwanese style beef noodles today, and I added some daikon radish and carrots cause I like them. :3

在我沒寫報紙的這段時間,我默默的上了兩萬力(都快三萬力了),不小心變成GOW,還很厚顏無恥的參選了Miss eRep XD,以下為截圖紀念:

Now to the fun part.... the recipe! 😃
紅燒牛肉麵 Taiwanese Style beef noodles
材料:
Ingredients:
油 3 大匙
Oil 3 TBS
糖 4 大匙
Sugar 4 TBS
牛腩 4磅 (大約兩公斤,為什麼? 因為我剛好買到這麼多哈哈哈)
Beef finger meat/boneless short ribs/shank (pick one that's available or the one you like) 4 lbs
白蘿蔔 1 大根
Daikon Radish large 1
紅蘿蔔 1 根
Carrot jumbo 1
辣豆瓣醬 4 大匙
Chinese spicy bean paste 4 TBS
米酒 1 碗
Chinese/Taiwanese rice cooking wine 1 cup
醬油 2 碗
Soy sauce 2 cups
蕃茄 1 個
Medium tomato 1
洋蔥 1.5 顆
Medium Onions 1.5
大蒜 10 瓣
Peeled garlic 10 cloves
蔥 5 根
Green Onions 5
薑 1 塊
Ginger 1
八角 2 個
Star anise 2
乾辣椒 3 根
Whole dried chili pepper 3
滷包 2 個
Chinese/Taiwanese stewing spice pack 2
白胡椒粉 2 小匙
White Pepper 2 TSP
辣椒粉 1 小匙
Chili Powder 1 TSP
麵 1 團 (可自行加減)
Dried noodles 1 ball (or as much as you like)

作法:
Directions:
1. 把所有材料(牛肉、紅白蘿蔔、蕃茄)切好備用,洋蔥跟蔥略切就好,不用切太小。大蒜拍扁。薑切成薄片。
Dice all ingredients (beef, radish, carrots, tomatoes) into bite size. Roughly chop the onions and green onions, smash the garlic cloves with the back of your knife. Slice the ginger into thin slices.
2. 熱鍋加油,加入糖炒到糖略溶冒泡。
Heat up the pan and add in the oil, and then add the sugar and stir until it is melted and slightly bubbling.
3. 加入切好的牛肉拌炒,灑一點點鹽調味。
Add in the beef and stir fry it a bit, season with a pinch of salt.
4. 肉炒至半熟時加入米酒。
Add in the rice wine when the beef is about half cooked.
5. 米酒滾時加入辣豆瓣醬拌炒約3分鐘。
Stir in the spicy bean paste when the rice wine starts to bubble, and cook for about 3 minutes.
6. 加入醬油以及其他所有食材,加水到淹過所有食材為止。
Add in the soy sauce and all the rest of the ingredients. Pour in water until all the ingredients are covered.
7. 開大火煮到滾,把浮沫撈乾淨之後轉小火加蓋燉約兩小時。
Turn the heat to high until the whole pot is boiling. Strain out all the bubbles and floating impurities. Turn the heat to low and cook with the lid on for roughly 2 hours.
8. 把多的油撈掉,大部份已經煮軟的蔬菜(紅白蘿蔔除外)、香料跟滷包也可以撈掉。
Skim off most of the fat that's floating on top, you can also strain out most of the cooked vegetables (exclude the daikon radish and carrots), spices, and the spice bag.
9. 加蓋再燉半小時,同時另起一鍋熱水煮麵。
Put the lid back on, simmer for another half an hour. At the same time, boil a different pot of water for noodles.
10. 麵煮好後瀝乾放入碗裡,加入牛肉蘿蔔與湯汁,用蔥花裝飾,加入喜歡的蔬菜,完成!
After the noodles are done boiling, strain the noodles and put it into the bowl. Add in the soup and beef and the radish and carrots. Garnish with green onions and add in vegetables of your choice, and it's done!

哪里的牛肉这么好,不用先飞水去血沫吗?
我這次買的肉還OK,米國的豬肉一定要先處理,可是牛肉只要事後有好好撈掉浮沫跟油倒是很不錯。
我吃的是澳洲牛,下次不飞水试试~

喔喔喔這個太棒了啊!XD
我個人是不會放薑,但會加蕃茄或芹菜,牛肉會用糖、醬油和八角先滷過
湯底之前會先用蔥爆香,然後曾經米酒沒了用紹興代替也發現了新的美味=w😕
麵起鍋會過水兩次,除了蔥花還會加酸菜,最好在加個蛋這樣XDD
感覺被我弄得快不是牛肉麵了...有機會真想吃吃妳煮的=w😕
